Grist in Your Lunch Box

It’s the usual liberal talking points on how we need to change what our kids eat in public school, but what stood out is the recipe Grist has at the end of the piece:

Anchovy, Goat Cheese and Romaine Salad

8 cloves garlic

1 teaspoon kosher salt

40 anchovy fillets — rinsed and chopped

6 ounces red wine vinegar

1 cup olive oil

1 teaspoon black pepper

6 heads romaine lettuce — rinsed and coarsely chopped

12 ounces fresh goat cheese — crumbled

1 cup red onion — minced

Place garlic, salt, and anchovy fillets in food processor; pulse until chopped. Add red wine vinegar, and then puree. Slowly add in olive oil while motor is running. Add black pepper. Toss greens with vinaigrette. Garnish with goat cheese and red onion.

How many kids in America would eat this for lunch?

But, back to the faulty premise of the Grist article. It’s not what kids are eating at school that’s the problem, it’s what they’re eating at home:

INDIANAPOLIS – The nation’s schools — under fire for unhealthy school lunches, well-stocked vending machines and phys-ed cuts — may actually do a better job than parents in keeping children fit and trim.

A study found that 5- and 6-year-olds gained more weight over the summer than during the school year, casting doubt on the assumption that kids are more active during summer vacation.

The findings don’t reveal what’s behind the out-of-school weight gain, but the researchers speculate it’s because the summer months lack the structure of the school year with all its activities and daily comings and goings.

I assume sooner or later we’ll need a czar to help solve this problem, too.
